Enjoy healthy and filling grab-and-go convenience with these Surprisingly Decadent and Super Healthy Vegan Overnight Oats perfect for busy mornings!
Life can get really hectic, and most of us often don’t have time to cook a nice breakfast to start the day off right, especially through the work week.
Bananas, granola bars, and meal replacement shakes are great in a pinch, but sometimes, you need something more hearty and filling.
Overnight Oats are the perfect answer to your breakfast needs!
Just combine the healthy ingredients in these Super Healthy Vegan Overnight Oat Recipes, let them sit in the refrigerator overnight, and they will be ready to eat in the morning.
Soaking the oats overnight softens them as if they’d been cooked conventionally, so no cooking is required!
These recipes fit into pint sized mason jars, which are perfect for enjoying your breakfast on-the-go. I also like to use wide-mouth jars for ease of use.
If you prefer warm oats, feel free to pop them in the microwave for 30 seconds to a minute.
Also, if you’re eating gluten-free, remember to buy certified gluten-free oats, since regular oats can be contaminated.
When eating healthy, people often complain they don’t have enough time to prepare healthy meals, but overnight oats are definitely the exception.
It only takes about 15 minutes to prep enough Vegan Overnight Oats for a whole week, and with so many wonderful flavors to choose from, you’ll never get bored!

Typically, the only ingredients that make overnight oats non-vegan are dairy products like milk and yogurt, making these recipes very easy to make completely plant-based.
Simply substitute your favorite plant milk and plant-based yogurt.
Some of my favorite plant milks include oat milk and pea milk. You can even make your own oat milk at home with this easy recipe. All you need is oats, water, and a blender!
I prefer pea milk, since it’s higher in protein than most plant milks and even provides your full daily requirement of Vitamin B12, a nutrient that’s difficult to get from a plant-based diet!
I also like to add healthy ingredients like nuts, seeds, nut butters, protein powder… you get the idea. These little add-ins provide extra nutrients, are typically low in calories, and can help you feel fuller longer.
Remember to grind whole flax seeds before adding to ensure you absorb their nutrients. You don’t need to do this with other seeds such as chia and hemp seeds.
Blending hemp seeds can make your overnight oats creamier, but isn’t necessary. Whole hemp seeds add a satisfying crunch to creamy oats.
Love chocolate? Cacao powder and cacao nibs add tons of antioxidants and chocolate flavor for surprisingly few calories.
Use up any fruits you have in the house. You can also add pureed greens. Just like smoothies, overnight oats are a great way to hide greens and other healthy foods you might struggle to get enough of otherwise.
Here are the links to some of my favorite add-ins:
Cashew butter (Artisana brand is amazing!)
Protein powder (I like this meal replacement powder rather than regular protein powder because you get tons more nutrients and the same amount of protein)
Honestly, you’re only limited by your imagination! Did I miss any of your favorite overnight oat additions? Share yours in the comments!
