Butternut squash is a delicious and versatile winter squash. Though you can buy this squash at the grocery any time of year, it is typically harvested in late September or October, which means it’s almost time to enjoy this squash in season! Butternut squash is super easy to grow, so if you like vegetable gardening, you may want to give it a try. Although technically a fruit, butternut squash is typically used as a vegetable in cooking. This squash can be roasted, toasted, pureed, or mashed and used in soups, casseroles, bread, muffins, and more. Its seeds are edible, either raw or roasted, and the skin is edible and softens when cooked.
